The best time to visit Istanbul is May through October, although July and August should be avoided if you’re not comfortable with potential daytime highs of up to 85°F. Daytime temperatures range from 56 – 80°F in May through June, and 56 – 78°F in September through October.

The Best Time To Visit Cappadocia
Similar to Istanbul, the best time to visit Cappadocia in Turkey is May through October, with May, June, September and October offering slightly milder temperatures than July and August. Throughout this time, daytime temperatures range between 43 and 83°F.
Cappadocia is known for its striking rock formations and valleys, as well as the beautiful churches carved out of caves by the Byzantines. Visiting from May through October is ideal for exploring these unique landscapes.

The Best Time To Visit Ephesus Region
The Ephesus region has a warmer climate compared to other parts of Turkey, particularly those in the inland or northern regions. Located along the Aegean coast, this area enjoys a Mediterranean climate, characterized by hot, dry summers and mild, wet winters.
The region can be visited from May through October, however July and August daytime highs can reach 91°F.
The milder temperatures during the summer’s shoulder months create ideal conditions for historical exploration. During these months, you can visit the world-famous ancient Greek city of Ephesus and its preserved Library of Celsus which was built in 120 A.D.
